Sweet potato pancakes, made from oats and served with fruit and nuts is one of our favourite combos. Wheat free and loaded with protein, these pancakes will leave you seriously satisfied and more importantly nourished.
Ingredients
- 1 sweet potato peeled and chopped
- 1 mug of oats
- 1 egg
- 1 large spoon of cottage cheese (organic if possible)
- 1 mug of almond milk
- 2 tablespoons of maple syrup or honey
- 1 tsp of cinnamon
- Chopped banana, strawberry and a few blueberries
- 1 tablespoon of flaked almonds
- 1 tablespoon of coconut oil
Method
1. Boil or steam the sweet potato until really soft.
2. Blend or mill the oats in a food processor or blender until they are fine.
3. Add the cooked sweet potato to the oats along with the egg, cottage cheese, almond milk, cinnamon and 1 tablespoon of maple syrup (or honey) and blend until a thick but smooth pourable paste is formed (add a splash more milk if its too thick).
4. Heat the coconut oil in a good non stick pan and add small amounts of the mixture to make little round shapes, flatten with a spoon if need be.
5. Cook for approx. 2-3 minutes on each side on a medium heat.
6. Serve with the fruit and almonds and drizzle the remaining 1 tablespoon of maple or date syrup.
